Tracey At T Sweets Day hosts a bake a long. This month it was to be an Apple recipe. She had mentioned Connie’s Creations Applesauce cake and I couldn’t resist trying it out as it sounded similar to a coffee cake. I got busy this morning and here is my gluten free, dairy free version:)

It was very simple to make though next time I would increase the amount of spices as I love a rich spice taste! I love raisins so I added raisins to my applesauce cake:). I used a new gluten free flour, Cup 4 Cup

I have to admit it was really nice to have a white flour to use. It was easy and I’m happy with the looks and taste of the product:)

The recipe:

1/3 cup butter (earth balance dairy free)

1 cup brown sugar

1 egg

1 cup applesauce ( I used 2.5 of the individual applesauce cups)

1 1/2cups flour (cup 4 cup gluten free)

1 tsp baking powder

1 tsp baking soda

1/2 tsp ground allspice

1/2 tsp ground nutmeg

1/2 cup raisins

Cream butter and sugar, add egg and applesauce.

Whisk dry ingredients.

Mix together wet and dry ingredients.

Mix in raisins.

Pour into greased 8″ pan (I used my springform pan).

Bake at 350 for 35 minutes or until toothpick comes out clean.

It was yummy!

      1. Yes I’m having chocolate cupcakes with white buttercream frosting! Picked them up myself at Walmart this morning! Hahaha I’m too old for birthday cake and that’s a whole lot of candles!! The cake would collapse hehehe.

  1. Wow that looks good too! I am so glad that gluten free products are easier to come by. I had a friend with Celiac 30 years ago, and there was nothing much for him to use for baking except cornmeal and sometimes rice flour. So many more options now, hurrah!
